Mini berry galettes
Try this sweet and easy treat: Preheat the oven to 425 degrees. In a bowl, mix your choice of berries with 1/4 cup sugar, 1 Tbs flour, juice of half a lemon, and 1 tsp vanilla extract. Roll out pie dough and cut into 5-inch circles. Place each one on a baking sheet lined with parchment paper and add berry fillings. Carefully fold the edges of the crust to create a small rim and brush the edges of each galette with a mixture of egg and water. Bake for 15 minutes until golden and bubbly, then cool and enjoy!
