Mushroom Croissant Stuffing

Upgrade your usual stuffing with this decadent version using croissants: Preheat oven to 375. Grease a 9- by 13-inch baking dish. In a large pot, heat 1 stick butter and 3 tbsp olive oil; let butter melt. Stir in 16 oz. diced celery and onion mix. Season with salt and pepper. Cook until tender, 8¿10 min. Stir in 16 oz sliced baby bella mushrooms and 2 tsp dried thyme. Cook until tender, 10-12 min. Let cool slightly. Stir in 2 eggs and 2 c broth, followed by 16 croissants torn into pieces. Transfer mixture to baking dish. Cover with foil and bake 20 min. Remove foil and continue baking until golden, 10¿15 min.
