Our Favorite Beef Tacos
Cuts like beef chuck are ideal for cooking low and slow. After letting it simmer for a few hours, you've got tender, shreddable beef - the kind that's perfect for barbacoa tacos. Give it a try with this simple recipe: Cut 4-5 lbs of beef chuck roast or brisket into large chunks, then place in a slow cooker. In a food processor, blend 4 chipotle chilis in adobo, 5 roughly-chopped garlic cloves, 1 tbsp cumin, 2 tsp dried oregano, 1 tsp salt, ½ tsp pepper, ¼ c apple cider vinegar, ¼ c water, and ¼ c lime juice. Pour mixture over meat in cooker. Cover and cook on low for 8-9 hours or on high for 6 hours. Shred the meat, then mix back into the slow cooker. Let rest 15 minutes to allow the juices to settle.
