Add Feta To Summer Salads
Summer salads are all about incorporating the freshest seasonal produce, especially berries and stone fruit. We like to balance out their sweetness with bits of feta cheese, which add back in a briny, salty 1-2 punch. Give it a try with this recipe from our team: In a small, dry skillet, toast 1/3 c pecans over medium heat until fragrant and slightly darker, 4-5 minutes. Wash and dry 4 oz mixed spring greens, then place in a large mixing bowl. Add 2 thinly-sliced peaches and 2 oz crumbled feta. In a smaller bowl, whisk a few glugs of olive oil, a splash of white wine vinegar, a drizzle of honey, and salt and pepper to taste.
