The king ivory salmon owes its coloring, or lack thereof, to an inability to process the pigments in crustaceans in their diet—and twenty years ago this rare fish was considered more a curiosity than a delicacy. It was a misfit fish, seemingly destined to forever swim in the shadows of its more brightly colored cousin. But then a revelation! Suddenly the people bowed down to the rich, buttery, silky taste and texture—and before long the ivory king reigned supreme. This fillet sautées beautifully, and is best unencumbered by bold flavors. Please note: Due to this salmon's delicate flesh, we do NOT scale the fish or remove the pin bones. We recommend removing the pin bones after cooking.
