From Cherrystone Aquafarms at the tip of Virginia's Eastern Shore, these smaller oysters are approachable, but add the salt and sass the Tidewater area of Virginia is famous for. We think its the perfect balance between sweetness and brine. Their beautiful shape and deep cup were so difficult to produce that oystermen often referred to them as "little bitches" and the name stuck!
