It might be the smallest of Maine's sea-run fish, rarely exceeding 6-9 inches in length, but the Rainbow smelt causes quite a stir for fishermen and seafood lovers alike. That's because of its mild, yet sophisticated flavor. We think smelt are best enjoyed fried (they fit so perfectly in the frying pan!), but they're also great poached or even baked. We source ours straight from the icy waters of Maine during the winter months when schools of smelt swim up river to local estuaries and streams.
