A dense, tender flesh with a rich and oily flavor, sardines taste a little like tuna and can be prepared in a number of delicious ways. Our sardines are sustainably caught by small boats fishing at night off the Galician coast and shipped to us in the morning direct from the docks. While sardines are often sold tightly packed in cans, they taste so much better when fresh—fuller, oilier, and more robust. The preparation process for fresh sardines is much like other whole fish—after they're cleaned, you can grill them whole or fillet them before baking, broiling, or frying them. We like to serve them simply with a squeeze of lemon juice and a drizzle of olive oil.
