Snow Pea Tips

Contrary to its name, snow pea tips don't actually refer to the tips of snow pea pods, but rather the leafy portion. The edible part is the mid-section, sandwiched between the tough stems at the end of the plant and thick stalks in the center of the plant. These stalks are crisp and hollow and the leaves are loaded with a refreshing grassy flavor. It's best enjoyed stir-fried, steamed, or simmered in soups.
