The Picasso melon was first bred in Japan and is named for the paint-like splotches on its outer rind, which lighten as the fruit ripens. Inside, the white flesh is intensely sweet, with a flavor reminiscent of Asian pear. Because of its firm texture, the Picasso holds up well when grilled. It also is a great choice for the classic pairing of melon and prosciutto.
