Our Persian Feta begins with an overnight set in a traditional lactic set, not unlike yogurt. The Feta is drained quickly, once drained it is infused with native pepperberry, lightly seasoned with salt and left to age for 12 or so days, after which we carefully portion the cheese by hand into jars, fill with a native ingredient spice mix and fill with a blend of vegetable and Coriole Vineyards olive oil. Expect a mild kick of heat from the native pepperberry that gently arises on the palate. This rich, decadent cheese is the perfect vehicle for our globally sought-after native Australian ingredients. Use as the centerpiece for a cheeseboard, for dipping or spreading, or tossed through a tomato-based salad or a simple addition to level up your patatas bravas. (from Kris Lloyd)
