Also known as Double Cream Brie. This double-crème lusciousness has a mild buttery flavor and a sweetness that goes very well with fresh fruit, bread and sweet wine. Fromage d'Affinois may remind you of a triple-creme with it's velvet texture. But that texture is achieved by ultra filtration, no cream added, which breaks down the fat molecules in the milk, removes excess water and concentrates the proteins.
