Turkey Chili With Pumpkin

The recipe uses the puréed kind to add creaminess and just a hint of sweetness. There’s also ground turkey to keep things nice and lean, along with the traditional seasonings and add-ins to give the chili plenty of flavor and body. Turkey Chili With Pumpkin Recipe

What You’ll Need

2 tablespoons olive oil
1 small yellow onion, chopped
1 medium bell pepper, cored, seeded, and chopped
2 small jalapeños, ribs and seeds removed, minced
2 cloves garlic, minced
1 lb white or dark meat ground turkey
One 14.5 oz can diced tomatoes with their liquid
One 15 oz can pumpkin purée
1 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon pepper
One 15 oz can black beans, drained and rinsed

What To Do:

Heat olive oil in a large pot over medium-high heat. Add onion, bell pepper, jalapeños, and garlic. Cook, stirring often, until tender, about 5 minutes.

Add ground turkey and break up into pieces. Cook a few minutes until browned. Stir in diced tomatoes, pumpkin purée, water, chili powder, cumin, salt, and pepper. Bring mixture to a boil, then reduce heat to low.

Stir in black beans. Cover pot and simmer, stirring occasionally, for 30 minutes. Divide between bowls and add your favorite toppings.
