Romaine Wraps With Saigon Chicken

untitled-design34 These lettuce wraps are easy to make, quick to assemble, and are the perfect light meal for a hot summer’s day. They can be a little messy to eat, but the flavors and aromatics will totally make it worth it!

What You’ll Need:
1 1/2 pound ground chicken
3 tablespoon canola oil
2 tablespoon fresh ginger
1 jalapeño or Serrano chili
2 tablespoon Asian fish sauce
2 tablespoon light brown sugar
2 clove Earthbound Farm Organic Garlic
1 lime
1/3 cup fresh mint leaves
2 Earthbound Farm Organic Romaine Hearts

What To Do:
Heat the oil in a large skillet over medium-high heat and add the chicken. Cook, stirring frequently, for 3 minutes, then add the ginger, jalapeño, fish sauce, sugar, garlic, and the lime zest and juice. Cook, stirring frequently, until the mixture is cooked through and the juices have almost evaporated, about 7 minutes.

Remove the pan from the heat and stir in the mint and cilantro.Arrange the romaine leaves on a platter. Transfer the chicken mixture to a bowl. To serve, top a lettuce leaf with some of the chicken, arranging it along the central rib, but stopping a half inch short of either end. Fold the leaf in half lengthwise, and enjoy! (Serves 4)
