Leftover Thanksgiving Turkey Chili
Turn your leftover turkey into a flavor packed bowl of comfort.
What You’ll Need
2 tablespoons oil
1 medium white onion, diced
1 green bell pepper, seeded and diced
1 small jalapeno, seeded and minced
3 cloves garlic, chopped
3 tbsp chili powder
1 tablespoon ground cumin
1 tablespoon dried oregano
Salt and pepper, to taste
3 cups turkey meat, roughly chopped into bite-sized pieces
One 28-ounce can fire-roasted diced tomatoes
2 cups chicken broth
Two 15-ounce cans black beans, drained and rinsed
Leftover mashed potatoes, for serving
Sour cream and chopped scallion, for serving
What To Do
Heat the oil in a large pot over medium heat. Add the onion, jalapeno, garlic, and bell pepper, and cook until soft and translucent. Add the turkey and spices; stir until combined.
Pour in the tomatoes and chicken broth; bring to a simmer and cook until thick.
Add the beans and cook for an additional 20 minutes. Serve over leftover mashed potato; finish with sour cream and sprinkle of chopped scallions. Enjoy!
