Green Curry Mussels Recipe

This easy one-pot meal is based around a flavorful Thai-style curry. We love it with mussels, but you can also try it with shrimp or your favorite white fish.

Green Curry Mussels Recipe

What You’ll Need:
2 lb mussels
1 tbsp olive oil
2 garlic cloves, chopped
1 tbsp green curry paste
1 tbsp brown sugar, can substitute with white sugar
2 tbsp fish sauce
1 can coconut milk
Handful of basil
1 tsp lime zest (optional)
½ fresh chili, chopped (optional)

What to Do:
Heat the oil in a pot over medium heat, then add the garlic and cook for a few seconds. Add the green curry paste and brown sugar. Cook for 30 seconds, then stir in the fish sauce and coconut milk. Bring to a simmer for 3 minutes before adding the mussels. Cover and let steam until mussels open, a few minutes. Stir in a handful of basil and serve. For an extra kick, finish with grated lime zest, a squeeze of lime juice, and chopped fresh chilis.
