Make a Court Bouillon for Shrimp

Enjoy perfectly poached shrimp in minutes with this traditional flavorful broth.


This holiday season, impress your guests with your own homemade shrimp cocktail. This quick and delicate cooking method delivers crisp, plump shrimp that are as delicious on their own as they are with cocktail sauce.

 

What You’ll Need:
2 pounds Raw Jumbo shrimp
2 quarts water
2 cups dry white wine
2 stalks of celery
1 leek
2 carrots
12 peppercorns
3 stalks parsley
3 tablespoons kosher salt

What to Do:
Roughly chop celery, leeks, and carrots. In a medium sized pot, add water and chopped vegetables. Add white wine, salt, peppercorns, and parsley.Bring this mix to a boil and turn down to a simmer for 15 minutes.

After 15 minutes, add your shrimp and cook at a simmer for five minutes. Drain the shrimp into a colander and rinse under cold water to prevent overcooking.

Place shrimp in the refrigerator to completely chill. Discard the vegetables from the court bouillon. Serve with FreshDirect homemade cocktail sauce, horseradish and lemon.
