Beer-Braised Spicy Beef Tacos Recipe

Beer-Braised Spicy Beef Tacos Recipe
What You’ll Need:
2 tablespoons olive oil
One 2 lb. boneless beef shoulder roast
Salt and pepper
One 12 ounce bottle beer
2 medium chipotle peppers in adobo sauce, minced
2 tablespoons plus 1 teaspoon adobo sauce from chipotles, divided
12 6-inch corn or flour tortillas, warmed
Optional toppings: chopped red onion, chopped fresh cilantro, crumbled queso fresco, sour cream, lime wedges for squeezing over
What To Do:
Heat olive oil in a large, heavy-bottomed pot over medium heat. Season beef all over with salt and pepper. Place in pot and cook, turning, until browned all over.
Pour beer, chipotle pepper, and adobo sauce into pot. Bring to a boil, then reduce heat, cover pot tightly, and simmer gently until fork-tender, 3 1/2 to 4 hours, turning halfway through (check on tenderness starting at 3 hours).
Remove beef from pot and let cool slightly. Trim and discard any excess fat, then shred meat with two forks. Return beef to pot and stir into cooking liquid; warm through over medium heat. Serve beef inside tortillas with your preferred toppings.
