No-Bake Blackberry Cheesecake Bar Recipe

What You’ll Need:

1½ cups granola
⅔ cup coconut oil, divided
½ cup blackberries, plus more for garnish
Juice of 1 lemon
⅓ cup maple syrup
1 teaspoon vanilla extract
1½ cups raw cashews, soaked in water for 3 hours

What To Do:

Place granola and ⅓ cup coconut oil in a blender or food processor. Pulse until well-combined and texture is fairly smooth, but not powdery. Press mixture into an even layer on the bottom of an 8- by 8-inch baking dish.

Clean out the blender and add the berries, lemon juice, maple syrup, remaining ⅓ cup coconut oil, vanilla extract, and soaked cashews. Blend until very smooth and creamy.

Spread mixture on top of the granola base in an even layer. Cover dish with plastic wrap and freeze for 3 hours. Cut into squares and garnish with additional blackberries, if desired, before serving.
