Mini Berry Galettes Recipe
What You’ll Need:
1 lb. fresh or frozen berries
1/4 cup sugar
1 tablespoon flour
Juice from half a lemon
1 teaspoon vanilla extract
One package puff pastry dough (or substitute your favorite pie dough)
1 egg, beaten
What To Do:
Preheat the oven to 425 degrees F.
In a large bowl, mix berries with sugar, flour, lemon juice, and vanilla extract.
Roll out pie dough to 1/4-inch thickness. Using a cookie cutter or large glass, cut dough into 5-inch circles. Place each circle on a parchment-lined baking sheet.
Place a scoop of berries in the center of each circle. Carefully fold the edges of the dough around the berries to create a rim. In a small bowl, mix the beaten egg with a tablespoon of water, then brush egg over the exposed parts of the dough. Transfer sheet to oven and bake galettes for 15 minutes, or until filling is bubbly and crust is golden. Let cool before serving.
