Stuffed Peppers with Ground Meat Recipe
What You’ll Need:
1 tablespoon olive oil
1 lb. ground meat (beef, pork, turkey, chicken, etc.)
Salt and pepper
½ cup diced onion
4 cloves garlic, minced
½ cup diced tomatoes
½ cup steamed brown rice
6 bell peppers, tops sliced off and insides scooped out
What To Do:
Preheat oven to 425 degrees.
Heat olive oil in a large pan over medium heat. Add ground meat, break it up into pieces, and season with salt and pepper. Cook for a few minutes, tossing occasionally, until lightly browned. Transfer to a paper-towel-lined plate to let oil drain.
In same pan over medium heat, add onion, garlic, tomatoes, and rice. Cook a few minutes until onion is translucent. Stir in reserved meat, then remove from heat.
Place bell peppers on a baking sheet, cut-side up. Fill peppers with the meat mixture. Place sheet in oven and bake until peppers are tender, about 20 minutes.
