Spicy Masala Turkey Steaks over Coconut Curry Squash Noodles
This warm turkey curry dish is just as tasty as ordering delivery but is so much healthier.
What You’ll Need
3 The Great American Turkey Co. Spicy Masala Turkey Steaks
1 tbsp extra virgin olive oil
2 garlic cloves, minced
2 tsp ginger, minced
4 scallions, diced into inch pieces (white parts only–reserve the green parts for garnish)
1 red bell pepper, quartered, seeded and sliced
½ tsp sea salt
1 tbsp Thai green curry paste
One (12-14oz) can coconut milk
1 lb green and yellow squash noodles
4 oz sugar snap or snow peas, halved
Fresh cilantro, torn into smaller pieces
What To Do
Cook turkey according to package instructions and remove from heat and transfer to a plate. Heat 1 tbsp olive oil to a medium pot with 2 minced garlic cloves, 2 tsp minced ginger, 3 diced scallions, 1 sliced red pepper, and a pinch of salt, then cook for 2 minutes until fragrant. Remove pan from the heat and stir-in 1 tbsp curry paste and 6 ounces of coconut milk and stir into the pan until well mixed and return to the heat to cook for about 2 minutes. Add package of zoodles and snap peas and increase heat to high and simmer for about 4 minutes. Garnish with fresh torn cilantro.
