Veggie Burger Stacks

These fresh flavors really stack up.

Green Goddess Dressing
¾ cup sour cream or full fat Greek yogurt
½ cup vegan mayonnaise
¼ cup chopped fresh dill
1 tbsp dried tarragon
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 clove garlic, minced
Salt and pepper

Stacks
6-8 Amy’s California Veggie Burgers
Balsamic vinegar
1-2 medium shallots, sliced thin
3 large tomatoes
2 big handfuls of arugula

What To Do:
For the Green Goddess Dressing
Whisk together all the dressing ingredients in a small bowl to combine or, if you like a smoother dressing, combine ingredients in a small food processor and pulse until smooth.

For stacks
Make “balsamic shallots” by covering the shallots in just enough balsamic vinegar to cover; let soak 10 minutes. Cook veggie burger according to instructions on box. Lay down a slice of tomato, followed by some arugula, a veggie burger and a hearty drizzle of the Green Goddess. Repeat for another layer and top with balsamic shallots.
