12 Days of Cookies: Dark & Crunchy Peanut Butter Cookies from Hungry Couple NYC

Dark & Crunchy Peanut Butter Cookies
Time: 35 minutes
Yield: About 12 cookie sandwiches
What You’ll Need:
For the peanut butter cookies:
1 egg
1/2 cup granulated sugar
1/2 cup brown sugar
1 stick (4 oz) unsalted butter, at room temperature
1/2 cup crunchy peanut butter
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
For the dark chocolate peanut butter filling:
2 tablespoons confectioner’s sugar
2 tablespoons milk
1/2 cup chocolate peanut butter, such as Peanut Butter & Co.
Pinch of salt
1/4 cup chopped roasted peanuts (optional)
What to do:
Preheat the oven to 350 degrees F.
To make the cookies: Using a mixer, cream the egg, granulated sugar, brown sugar, butter, peanut butter and vanilla until smooth. In a separate bowl, sift together the flour, baking soda and salt. Fold dry mixture into wet mixture until it just comes together.
Using a 1 oz. scoop, drop cookies onto a baking sheet lined with parchment paper, keeping them spaced a few inches apart to allow for spreading. Use two baking sheets if necessary. Bake for 15 minutes, alternating in oven halfway if using multiple sheets. Allow cookies to cool completely before removing from the baking sheet.
To make the filling and finish: While the cookies cool, whisk together the confectioner’s sugar and milk in a bowl. Add the chocolate peanut butter and salt and mix until smooth.
Once the cookies have cooled, spread a few teaspoons of filling on the flat side of half. Top with the remaining cookies to create sandwiches.
If you like, coat a third of of each cookie sandwich in any remaining filling and roll in the chopped peanuts.
